The main research topics of this laboratory are:
1. Studies on the microbiological quality and safety, and the microbial ecology of Greek raw milk and different kinds of dairy products
2. Studies on the behavior of pathogens in milk, cheese and other dairy products as related with the current national and EC regulations for consumer protection
3. Studies on the effect of various technologies and/or antimicrobial systems on the beneficial, spoilage or pathogenic microorganisms of milk and milk products
4. Studies on processing technology innovations and the development of new starter or protective cultures for fermented dairy products
